Resumo
The fish supply chain represents an economically important activity in Piúma, a municipality located on the southern coast of the state of Espírito Santo. Fish is a food rich in nutrients but highly perishable and susceptible to pathogenic organisms, where quality monitoring and assessment of the hazards that may be associated with its production process are ways to ensure the safety of its commercialization. Therefore, the objective was to know the hygienic-sanitary strategies of the establishments (fish shops and industries) that handle fish in the municipality of Piúma - ES and to evaluate the parasitic incidence in fish of commercial importance in the region. The characteristics of these conditions were investigated through questionnaires, collection, analysis and identification of parasite-host correlations. The industry tends to follow the legislation, unlike some establishments that do not have a hygienicsanitary strategy, nor technical assistance and trained professionals working, which contributes to weakening the quality of the fish chain in the city. Endo and ectoparasites were collected from 43 different specimens of host fish. The peroá (Balistes capriscus) is the host with the highest rate of parasitism, which is worrying because it is a fish of commercial importance in the region. Mackerel, grouper and bonito, along with peroá are among the fish with the highest reports of parasites affected in different anatomical sites, such as gills and musculature. Trypanorrhyncha larvae were collected in different organs of fish and Eurydice sp. in a greater diversity of host fish, both showing a higher incidence of parasitism. This work presents new reports of ichthyoparasites and new host fish that are commercially important. It is one of the pioneering studies in the region, addressing a relevant topic for the fish chain, as it includes a group of pathogenic organisms that can harm the economy, product quality and consumer health. Understanding the importance of host-parasite relationships opens up vast possibilities for scientific research. There are many gaps to be studied about this potential risk, therefore, further research is recommended, mainly on possible allergic manifestations and conservation methods to minimize the effects and incidence of these organisms, guaranteeing, together with inspection bodies, safe and quality fish.
